Taramosalata (Fish roe salad - meze)

Taramosalata is one of those dishes.   It is roe fish blended into a creamy pink dip of pureed potatoes with parsley, lemon juice, and finely chopped onion (optional).   In meze, this is one of the first dishes that it is served.   In taverns, they always bring it along with salad, tzatziki, and tahini.   We will talk about the last two later.   Well, let’s see our recipe…   Ingredients 2 kg tarama (fish roe). 1 large potato or two small ones 450gr of Greek bread 1 tsp of shredded and dried onion 1 cup olive oil The juice of one lemon (medium size) Tarama is the hardest ingredient to find, so it is a good idea to look at groceries that import Mediterranean food. Chocolate Cake with Ganache Glaze


Ingredients
3 medium eggs 
200g butter (chopped)
300g caster sugar
90g plain flour
130g self-raising flour
1/4 teaspoon bicarbonate of soda
50g cocoa powder
200g Greek style yogurt
1 teaspoon vanilla extract

Chocolate Glaze
200g dark eating chocolate (chopped)
100g fresh cream
20g butter

Preparation Method

1. Preheat oven to moderate (150ºC fan-forced). Grease 24cm bundt pan well.

2. Beat butter and sugar in medium bowl with electric mixer until light and fluffy. Add eggs, one at a time, beating until just combined between additions; stir in combined sifted flours, soda and cocoa in two batches. Then add yogurt and vanilla extract.

3. Spread mixture into pan; bake about 1 hour 10 minutes. Stand cake 5 minutes; turn onto wire rack to cool.

4. Stir ingredients for chocolate glaze in medium heatproof bowl over medium saucepan of simmering water until smooth. Pour glaze over cooled cake; stand 30 minutes before serving.

  11. I loveeeeeeee ganache...even more than buttercream frosting! I think ganache goes well with everything from brownies to cakes to pies...lol. I wish you would cut me a slice of this cake right away...haha.
