Taramosalata (Fish roe salad - meze)

Taramosalata is one of those dishes.   It is roe fish blended into a creamy pink dip of pureed potatoes with parsley, lemon juice, and finely chopped onion (optional).   In meze, this is one of the first dishes that it is served.   In taverns, they always bring it along with salad, tzatziki, and tahini.   We will talk about the last two later.   Well, let’s see our recipe…   Ingredients 2 kg tarama (fish roe). 1 large potato or two small ones 450gr of Greek bread 1 tsp of shredded and dried onion 1 cup olive oil The juice of one lemon (medium size) Tarama is the hardest ingredient to find, so it is a good idea to look at groceries that import Mediterranean food. Halva Treats (Tutorial video included)

Halva is a dessert on its own, and we usually eat it during a fasting period. It’s main ingredient is sesame seeds but I will not comment further because honestly, I do not know how I can make one. Greek halva is excellent and I believe you can find it in all big supermarkets.

This dessert will participate in “Creative Concoctions #5”, an event which is held in Kopiaste.. to Greek Hospitality.

Halva Treats

Pastry Ingredients
1½ cups of plain flour
1 tablespoon of dry yeast
1/3 teaspoon of salt
2 teaspoons of caster sugar
1 teaspoon of powder cinnamon
2 tablespoons of Greek extra virgin olive oil
1/3 cup of warm water (probably ½ a cup, it depends of how strong is the flour)

Filling Ingredients
200gr/1 cup/7 oz plain halva
2 tablespoons of honey
2 teaspoons of Nutella cream (or any other milk chocolate, melted)

Serving
1/3 cup icing sugar
1 teaspoon of powder cinnamon

Preparation Method

Pastry
1) Mix flour with yeast, salt, sugar and cinnamon; add olive oil and mix with a spoon.
2) Pour water and make a dough that do not stick on hands; allow to rest in a warm place for at least 30 minutes.

Filling
1) Mix all three ingredients in a bowl. If the filling is stiff put it in the microwave for 30 seconds just before you use it.

Making the treats
1) Line an oven tray with a non stick baking sheet.
2) Using a rolling pin, your hands or a water glass, roll the dough into 0.50cm thick.
3) With the help of a glass cut the dough into small circles, or any other shape that you like. Place a teaspoon of the filling on the pastry and then fold the sides in such a way to form a pouch.
4) Lay the pouches on the oven tray, leaving 2cm distance between each other and set aside for 20 minutes before baking.
5) Bake in a preheated oven at 170C, for 25 minutes.
6) Allow to cool; Dust icing sugar and cinnamon powder just before serving.
